Seaweed
Seaweed and kelp are harvested from the clean, uncontaminated waters of southern South Korea from November through Next July.
Seaweed is rich in iron, calcium, and iodine, which help support healthy metabolism. For this reason, seaweed soup has long been consumed in South Korea as a traditional postpartum recovery food. In addition, seaweed is rich in alginic acid, and when lightly blanched and served with vinegar sauce, it aids digestion and helps relieve constipation. Like kelp, seaweed naturally contains water-soluble glutamate, giving it a delicate umami flavor.
Kelp, commonly known as Kombu in the market, contains one of the highest natural glutamate contents among food ingredients. Compared to other umami-rich ingredients, kelp is unique in that it can impart deep umami flavor simply by being added to a dish, without cooking, fermentation, or additional processing. Since MSG was originally developed through research on the flavor compounds found in kelp, it has long been widely used throughout East Asian cuisine as a key ingredient for broth and stock preparation.
